FOOD & WINE OF BORDEAUX - ROSA & DAVID

Known around the world for its prestigious wines, Bordeaux is much more than a wine region. Situated perfectly along the Garonne Estuary and between the Atlantic Ocean, lush lands of the Dordogne and just north of the Pays Basque, Bordeaux is a gastronomic paradise. Bordelaise cuisine is firmly tied to the local terroir, a word meaning the land that produces the unique products such as Cap Ferret oysters, the famous Foi Gras, exceptional lamb and duck and local saffron. In our food and wine pairings we will begin with a rich pate`, and a taste of our own oysters before we celebrate some variations on a duck theme. We finish with the sweet of the region canale`and a duo of cheese. Enjoy two red "Bordeaux Blend" wines; one from the famous Medoc sub-region, the other a Bordeaux Superieur from the Entre-Deux-Mers. As well, savour an original Sauternes, its succulence a result of 'Noble Rot'. We will also consider how France's Appellation system applies in Bordeaux with the added complexity of Cru Bourgeois and Grands Crus.
